Sugared Candy

Ingredients:

  • 2 cups powdered sugar

  • 1110 ml of water

  • 3 tbsp lemon juice

  • 3 tbsp peach schnapps or raspberry vodka

  • 1 tsp cream of tartar

  • 10 g agar agar

  • 1 tbsp red yeast rice powder

  • 2 tbsp rose water

  • 2 tsp orange extract

  • 2 tsp raspberry extract

  • 50 grams of craisins or dark cherries (chopped)

  • extra unsweetened coconut powder for dusting


Instructions:

  1. In a pot, boil 328 ml of water and 2 cups of powdered sugar. Boil until temperature reaches 240 degrees Fahrenheit. Turn off heat and add rose water.

  2. In a separate pot, boil 860 ml of water, then add 10 g of agar agar and red rice yeast powder, then add lemon juice and cream of tartar. Make sure there are no clumps.

  3. Pour rose syrup into agar agar mixture. Let mixture turn a red yellow, pale orange in color. Turn off heat.

  4. Pour mixture into a glass container. Top with chopped fruit. Chopped fruit will sink to the bottom.

  5. Let sit for at least 2 hours at room temperature or in the fridge uncovered.

  6. After agar agar is set, cut into cubes, and dust with coconut cream powder.
