Ingredients:
1 - 16 oz package of fresh rice stick noodles
6 pods of tamarind (deseeded)
3 tbsp of oyster sauce
2 tbsp soy sauce
8 tbsp of fish sauce
1/2 tbsp of fermented shrimp paste
2 tbsp of sesame oil
8 oz of raw white shrimp (peeled and deveined)
1 onion (diced)
8 cloves of garlic (minced)
4 oz bean sprouts
1 stalk of scallions (chopped)
1 bunch of cilantro (chopped)
2 lemons or 4 limes (sliced)
4 tbsp sugar
1 tbsp Sriracha
2 eggs
8 tbsp of crushed peanuts
4 tbsp of chili oil
5 Thai chilies (thinly sliced)

Instructions:
In large pot, boil rice noodles. Strain and put aside.
Peel tamarind and remove seeds.
In a mixing bowl, mix oyster sauce, soy sauce, tamarind paste, and shrimp paste together.
Heat wok on high heat. Toss onion and 4 cloves garlic into wok. Add oil and shrimp, saute together. Pour sugar followed by Sriracha in sides of wok.
Remove shrimp from heat. Set aside.
Quickly rinse wok with water. Return to stove on high heat. Toss in onions and garlic. Add oil and toss in whisked eggs, quickly add noodles.
Add mixture of oyster sauce, soy sauce, tamarind paste, and shrimp paste to noodles. Spread evenly until mixture is homogeneous. Quickly toss together on low heat using spatula or silicone tongs. Do not break noodles.
In sauce pan, on medium low heat, add 3 tbsp of sugar. Stir until sugar melts. Quickly add fish sauce, 1/2 tbsp of white vinegar, 1/2 lime, 3 cups of water, garlic. Use spatula to flip noodles or silicone tongs.
Place noodles in plate or bowl. Top with cooked shrimp. Add one tablespoon of fish sauce mixture and 1 tsp of chili oil to each bowl of noodles. Garnish with bean sprouts, scallions, cilantro, lemon slices, crushed peanuts, and Thai chilies.
Note: There are many variations of this dish. This is how our family makes our Student Noodles. Adjust oyster sauce, soy sauce, shrimp paste, tamarind to your preference. You may omit shrimp paste if aroma is too pungent for you. This is the Cambodian version of Pad Thai noodles. It's called "Student Noodles" in Khmer because it is usually served to students in food stalls along the way to school. This is basically street food.
