Ingredients:
Two sheets of pastry puff dough
8 oz brie cheese
8 oz raspberry jam or cranberry jam
3 rosemary sprigs
1 - 3 oz orange liquor
Baking spray
Tools:
Mini muffin pan
Raspberry Jam:
On medium low heat, add two cups of cranberries or raspberries, 1 cup of water, 1/2 cup sugar to saucepan.
Add orange peels to mixture.
Reduce fruit mixture on low heat.
Add 1-3 oz of orange liquor to mixture and stir.
Use an immersion blender to turn mixture into thick, smooth sauce.
Instructions:
Preheat oven to 350 degrees Fahrenheit.
Cut pastry puff into small squares.
Cut brie into small pieces.
Coat baking pan with non stick baking spray.
Mold pastry puff dough into mini muffin pan.
Add brie and top with raspberry jam.
Bake for 10 - 15 minutes.
Remove from oven.
Garnish with rosemary sprigs
