Ingredients:
2 bunches of kale or 4 cups of kale
1 bunch of spinach or 2 cups of spinach
1 Granny smith apple
2 kiwis
8 oz of blueberries
8 oz of blackberries
1 banana
1/2 wedge of lime
1 tbsp of ginger
32 oz of water or coconut water or low sugar Oceanspray cranberry juice or low sugar orange juice
Serving size: 8 ounces
Instructions:
In a blender, add all ingredients until mixture is smooth.
Optional step: strain the mixture.
Add ice and blend when you want to drink the smoothie. However, it is healthier to drink the pulp because otherwise, it will be a sugary, non-nutritious drink. The pulp has an excellent source of fiber from the kale, spinach, and apple. Although the sugar is natural, its always better to eat or drink less sugary fruits if possible.
I usually make enough for the week or prep these ingredients ahead of time by chopping the fruits and kale to store it in the fridge or freezer on the weekends so I can quickly blend it with ice on the weekdays.
Keep in mind the antioxidants do reduce or degrade over time, just like orange juice so it is best to make it fresh and drink it the same day. Otherwise, you can prep the kale and vegetables to store and make throughout the week.
