Air Fried Coconut Fish

Ingredients:

  • 2 tbsp vegetable oil

  • 6 fillet white fish

  • 3 oz tempura batter

  • 2 eggs

  • 4 tbsp unsweetened coconut powder

  • 4 tablespoon panko crumbs

Instructions:

  1. Pat fish dry with paper towel.

  2. Whisk eggs. Set aside.

  3. Pour coconut powder, tempura batter, and panko batter into separate baking pans or plates.

  4. Dip a fish fillet in coconut powder

  5. Dip the fish fillet in tempura batter

  6. Dip the fish in panko bread crumbs

  7. Spray vegetable oil on fish.

  8. Air fry for 8 minutes at 400 degrees Fahrenheit. Flip fish after 8 minutes. Spray cooking oil. Cook for another 8 minutes at 400 degrees Fahrenheit.

Serve with sweet chili sauce, cucumbers, tomato slices, and with salad or rice.
